Imagine my surprise this morning when I realized that I have NOT posted my "famous" scones!!
I make these ALL THE TIME! and ALOT of people know I make wonderful DELISH Scones.
I hope you will try these, as I can't tell you how many times I have heard - "I usually don't like scones (they are too dry) BUT they LOVE these :)
Where these started to become "famous" was at Youth Camp during the summer. We have been cooks for many years and have stayed in a tent for years! The church decided to head over the mtns to where it is HOT during the summer and I just thought I was old enough now to not sleep in a tent plus I thought it was going to be too hot in a tent for 2 weeks!
While at our new location we discovered a fabulous little fruit stand that also did baking! PERFECT! They had SCONES! I asked the gal for her recipe and she gave it to me (as she could remember it) I have used it but they do not turn out the same every time as this recipe does (she used whipping cream instead of sour cream). Several of us LOVED the raspberry, wh. choc ones (made a little different of course) so I started making these in my trailer!!
To ease some of my guilt in being in a fab trailer,(while others are still in tents) I decided I wanted to do something as an unexpected treat for the cooks and a few of the leaders :) HOT SCONES made in my easy bake oven (as I call it). I would get up early and make 2 batches of these - usually in the middle of the week. As you make it easier I measure out the dry ingredients at home and put them in separate containers ready to go.
Now when we go camping with friends, I am often asked if I am going to make scones. . . . some have even provided the raspberries for them to make sure I DO!! Love it!!

I have made these SO MANY different ways: Raspberry White Chocolate Chip (these are a favorite), original Currants, Craisins - original and have used Cherry too, Blueberries, Blackberries or combo of both, Peach, Orange Cranberry etc.
Use your imagination! ♥
This is the original recipe:
1/2 c currants
2 c flour
3 T sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
5 T butter
8 oz sour cream
1 egg yolk
egg whites for top
Soak currants in hot water for 5 mins. Cut in butter to dry ingredients. Stir in currants. Blend sour cream and egg yolk, mix all together - don't overmix. Pat into 3/4" thick circle. Lay long knife over 1/2 and wiggle...cut into 8 equal wedges. Brush w/egg whites and top with cinnamon sugar. BAKE 375 for 20-25 mins. (make sure center is cooked)
OTHER OPTIONS:
1 c white chocolate chips (add to dry ingredients) and 1 c raspberries (I have used frozen ones and they work fine - just have to cook them longer) hints: the raspberries are very fragile - I poke holes into dough once in shapes and lightly push the berries all over. Drizzle white chocolate ontop - melt about 1/4 c wh choc chips, add 1 tsp butter, 3/4 c powder sugar, 1+ T milk (all these are rough amounts)
1/2 craisins are good too, add a little orange zest with these - also sprinkle with colored sugar OR
make up a little icing to drizzle over top as well.

ReplyDeleteOh my goodness they were so easy and I have to say the cran rains ans orange zest rocked it, my son liked the blackberry and well the rest liked the raspberry withe the white gonch on them. So, thanks again and keep blogging. I am enjoying cooking again.

ReplyDeleteI watched her make these a few weeks ago and couldn't believe how easily they came together. We had raspberry scones with no sprinkles and they were delicious!
