While my husband was working in NJ this summer, I got to travel over there to visit him. While I was there my niece made this onion tart for an appetizer. I thought it was fabulous and so did others that were over for dinner. I made it back here at home for a friend was turning 50 this year and I took it to their surprise party. I was curious to see it the "left"coast people would love it as much as they did on the east coast. They did!
2 T butter
4 medium size sweet onions - thinly sliced (about 6 1/2 cups)
1 1/2 tsp chopped fresh rosemary
3/4 tsp salt
1/2 tsp pepper
your favorite single pie crust
1 egg white, lightly beaten
3/4 c (3oz) shredded Gruyere cheese, divided
Preheat oven 425. Over medium heat add butter, onions, rosemary and salt and pepper. Cook 8 minutes or until tender and carmelized. Roll 12" circle piecrust. Place on parchment paper - brush with egg white. Sprinkle 1/2 cheese in center of crust. Spoon onion mixture over cheese, leaving 2 1/2" border. Sprinkle remaining 1/4 c cheese over onions. Fold piecrust border up and over onion, pleating as you go and leaving a 4" wide opening in the center. Brush crust w/egg white.
Bake 425 on bottom oven rack for 17-19 minutes, or until crust is golden. Let stand 5 minutes before serving. Cut with pizza wheel. ENJOY ♥
