These are one of MY favorites and my MOM's! She loved coconut and I do as well. This month is 11 years since she went home to be with our Lord - I miss having a Mom. . . . but for me when I bake, I have a lot of memories of my growing up years.
This was a recipe from one of the DORCAS cookbooks. There were a group of ladies from the lower mainland Vancouver Bretheren Churches that published 2 cookbooks. One of them has the year 1960 on it and the other one. . . . I have used so much - the cover is missing!
I wasn't planning to post this recipe today, but I took 2 plates of "treats" to share last night with a group of women and it was a favorite, and once again was asked if I give out the recipe ♥
Base
1 1/2 c graham cracker crumbs
1/2 c brown sugar
1 T flour
1/2 c melted butter
Mix all together and press into a 8x8 or 9x9 LINED pan. (you must line this or it is very difficult to cut the bars out of the pan)
Bake 350 for 10 minutes
TOP
2 c. coconut
1 can sweetend condensed milk
1/2 tsp almond extract
Mix all together and spoon evenly over base. (You want to be careful and put small "piles" over the base and then spread. If you put all on at once it will be too hard to spread over the base)
Bake 350 for 20 minutes or until a light golden brown and set.
Once cooled,I frost it with pale pink frosting (or icing as it's called in Canada)
2 T softened butter
2 c powdered sugar
1 tsp almond extract
milk - 2 T or so
To be honest, I don't ever measure when I make frosting! So if you need to add more milk or powdered sugar-add just a litle at a time.
